1 ½ C cubed cooked chicken
1 medium carrot, julienned
½ C juilenned cucumber
¼ C sliced radishes
¼ sliced ripe olives
¼ C cubed mozzarella cheese
(part-skim)
1/3 C fat-free Italian salad dressing
5 pita breads (6”), halved
lettuce leaves
Line pitas with lettuce. Toss remaining ingredients with
dressing and fill pitas with 1/3 cup filling each. Yield: 5 servings.
Nutrition: 1 serving has 276 calories, 4 g fat (1 g saturated fat), 39 mg
cholesterol, 674 mg sodium, 38 g carbohydrates, 2 g fiber, 20 g protein.
Diabetic exchanges: 2 ½ starch, 2 lean meat.

1 can water chestnuts (8 oz, drained and chopped)
1/3 C teriyaki sauce
2 TB chopped green onion
salt and pepper to taste
1 ½ lbs ground beef
7 hamburger buns, split
14 tomato slices
7 lettuce leaves
Combine water chestnuts, teriyaki sauce, onions, salt and
pepper in bowl. Crumble beef into bowl and mix just until combined. Shape into 7
½ inch thick burgers. Grill, covered, over indirect medium heat for 6-8 minutes
per side or until meat is no longer pink. Serve on buns with lettuce and
tomatoes. Yield: 7 burgers.
Nutrition: 1 serving has 321 calories, 11 g fat (4 g saturated fat), 35 mg
cholesterol, 778 mg sodium, 28 g carbohydrate, 3 g fiber, 25 g protein. Diabetic
exchanges:: 3 lean meat, 2 starch.

1 fresh pineapple, peeled and cut into chunks OR
1 can (20 oz) pineapple chucks, drained
1 can (11 oz) mandarin oranges, drained
1 C halved strawberries
1 C halved green grapes
1 C white wine or white grape juice
½ C chilled club soda
Combine fruit in large bowl. Combine wine or juice and soda
in a separate container and pour over fruit. Cover and refrigerate for at least
2 hours, stirring occasionally. Serve with a slotted spoon. Yield: 8 servings.
Nutrition: 1 serving (3/4 cup) has 93 calories, trace fat, 0 cholesterol, 6 mg
sodium, 19 mg carbohydrate, 2 g fiber, 1 g protein. Diabetic exchange: 1 fruit.
